My birthday in food

I turned 28 years old yesterday...don't know what to say about that really? I mean, I used to feel anxiety when I started to close in on 25, but yesterday I felt surprisingly ok. So I'm going to move on without pondering about my new age too much.

Now I'm not that into big birthday parties, instead I prefer smaller intimate gatherings. And yesterday I invited my family over for a three course dinner in honor of my birthday.

First course: Scallops
Main course: Beef roulade
Dessert: Chocolate fudge cake, my sister made this one :-)

Of course, while I was cooking, who sneaks up behind me and puts on her best " innocent eyes" look... None other than my little doggie Lisen, haha. Because it was my birthday, I just had to give her a little piece of that raw beef. Yuuummy!

I also got some nice gifts yesterday, one of which was a shopping trip to Kalmar :-) Which is where I'm heading tomorrow, yay! All in all, it was a lovely b-day!

I enjoy eating, but I mean I guess I do, however not so much that I want to spend hours in the kitchen. I usually make my food when I feel my stomach screaming for it, and by that time I want whatever I make to be ready quickly!

Most of my meals are made in 30-45 minutes, and I prefer whatever I make to require as little of my attention as possible! Which is why I love to just throw in stuff in the oven and let it take care of itself, or fry everything in one frying pan.

I have picked out a few uncomplicated dishes that I eat from time to time. Maybe not the most healthy food, but I'm not too healthy either, haha. Anyway, here they are with my quick amateur description.
My lean mean hamburger

1. Set oven for 225 degrees.

2. Form minced meat (beef or mixed) into a hamburger shape. You can add some minced onion in the minced meat. Season with salt and black pepper, then put it in an oven form.

3. Cut two potatoes into cloves. Put in an oven form and season with some salt and olive oil.

4. Put both oven forms into the oven at the same time for about 25 minutes.

5. Serve with whatever sides you want and enjoy!

Lean mean explanation
Because the hamburger is cooked in the oven I don't need to add any fat, hence "lean". But on my hamburger I usually want cheese, hence "mean", hehe.
Pytt i panna my way

1. Cut two potatoes into squares, boil for 10 minutes.

2. Cut sausage and onions into squares, put in frying pan and fry.

3. When the sausage and onions are almost ready, throw in the boiled potatoes and stir.

4. When everything is ready, move over to a plate. Quickly fry two eggs in the same frying pan and make sure the egg yolk is loose when served.

5. Serve with pickled beets or a salad. In the pic I have some tomatoes and homegrown chives :-)

Pytt i panna explanation
Based on the Swedish classic - Pytt i panna, or in English - Swedish hash.
Honey marinated chicken skewers

1. Boil rice. Set oven to 225 degrees.

2. While rice is boiling, cut one chicken breast into squares. Pour some honey marinade (I buy mine...) over them, put onto skewers or in an oven form. Throw in some cherry tomatoes. Put in oven for approximately 25-30 minutes.

3. Tzatziki. I prefer without cucumber, so maybe it's not really a tzatziki? Anyway, put some Greek/Turkish youghurt in a bowl, as much as you want. Add some minced garlic, salt and black pepper.

4. Serve and enjoy!
Ginger honey fried chicken with rice

1. Boil rice.

2. While rice is boiling, cut chicken and whatever vegetables you want into equal size bits. In the pic I used peppers and onion.

3. Throw it all in a pan and fry. Season with salt, white pepper and ginger. At the end when it's almost ready, add some honey and stir.

4. Serve with soy sauce.

This year I got a little appreciation gift from work to enjoy during my vacation, one free ice cream of my own choice. Naturally I chose the biggest ice cream of them all, hehe!

And of course I had to share it with my lovely dog Lisen, and my sister as well. I find that if you share your gifts it makes it more fun :-)

Today I have spent most of the day working on this website, adding pages, updating and changing a few things.

The one break I took was to eat. As I mentioned before, I now own a few plants for the first time in my life, and they are still alive :-) Today I picked some homegrown, organic, fresh parsley and added it to my dinner, yum!



Drunk driver and candy dream

It's Saturday, people drink and party, but not me. Not this Saturday, this evening I am the designated driver. Which is fine by me, I have had my share of "not being the designated driver", hehe.

Moving on to another topic, my weird dream I had last night. Or maybe not weird but kind of annoying. All through my dream, even if I did different things at different locations, I kept eating candy, and buying candy and eating some more candy. All night! I figured I must have a craving for candy, so I bought some today, haha. Have not eaten that much actually, but some.

Left pic: Here I am with Lisen, acting responsible tonight. And as you can see I still have not gotten that darn dog grid issue resolved. The owner of the pet shop have not called yet, I've waited over a week since she said she would call the makers and get back to me...Not very professional! By the way, the pet shop I bought it from is called Hundbiten...Anyway, on the other pic is of course my yummy candy :-)

Today, when Lisen and I were on our walk, a loose dog came up to us. Probably a runaway? This dog, a Doberman I think, came running from the forest, across the road to us. He stopped and wanted to say hi to Lisen, but she didn’t want to. Then he took off up into the forest on the side of the road we were on.  I just stood there, didn’t know what to do? Felt a bit helpless.

I walked over to a house nearby and asked if they knew anyone who had a dog like that, but they didn’t. Then I thought maybe we should try and find him in the forest, or backtrack where he came from. But he could have come from anywhere, plus Lisen was so tired. I had dragged her on a walk in the sun, didn’t think it would be as hot outside as it was, and she just laid down every chance she got. So we went home…

I took this pic yesterday, but this is the exact road were we encountered the dog today. He came up to us from the other side of the road, at the streetsign behind me, and ran off into the forest to my right. I really hope he is OK!

A few hours later I went into town to meet up with my sister and mum at the hairdressers. My sister got her hair done and it took a total of FOUR hours! We were all pretty hungry after that, so we went and had some dinner at Åhléns. Not the best food I have eaten…No disaster, just not very appealing or tasty flavours on the plate.

Today my sister and her dog, Diva, came to us in my mums house. We barbequed, honeymarinated chicken skewers, with rice in the persian "rice cooker" and tzatsiki, yum! After that some work on this site, check out media, and after that a movie.

So the movie we saw was "Cop Out" with Bruce Willis and Tracey Morgan. It was ok, sure some funny scenes that made me laugh out loud but nothing spectacular. It reminded me of the Lethal Weapon movies and Die Hard movies, although not as good.

And now, Today I am hoping Germany wins, have bet 30kr on them. Go Germany!
